Apricot Kernel Powder is produced by drying and fine-milling de-shelled sweet apricot kernels (Southern / bitter-treated varieties).
It delivers characteristic almond-like nutty flavour, ~25% protein, ~45% oil, vitamin E and fibre, used in bakery (macarons, marzipan), Chinese almond beverages, traditional desserts and cosmetic exfoliants. Treated (debittered) varieties are preferred for food.
