Carthamus Yellow (Safflower Yellow, also known as SY) is a water-soluble natural colourant extracted from the petals of Carthamus tinctorius (safflower). The primary pigment is hydroxysafflor yellow A (HSYA).
It provides bright lemon-yellow colour, is stable in acidic conditions (pH 3-6) and widely used in East Asian food manufacturing for noodles, confectionery and beverages. Also has pharmacological interest for cardiovascular benefits.
