Copper Chlorophyll (Copper Chlorophyllin, E141) is produced by saponifying natural chlorophyll extract and replacing the central magnesium ion with copper. This modification dramatically improves stability to heat, light and acid compared to natural chlorophyll.
This produces a bright, stable green colour. Available as oil-soluble copper chlorophyll and water-soluble sodium copper chlorophyllin. Widely used in food, pharmaceutical and cosmetic applications.
