Curcumin (diferuloylmethane) is the principal curcuminoid pigment extracted from turmeric rhizomes. It provides bright yellow colour in alkaline conditions and more orange in acidic conditions.
Curcumin has extensive research supporting anti-inflammatory, antioxidant and anticancer bioactivities. Available as oleoresin, powder or water-dispersible formulations for food colouring and functional food applications.
