Lycopene is the red carotenoid pigment responsible for the colour of tomatoes, watermelon, pink grapefruit and guava. It is the most potent singlet-oxygen quencher among carotenoids (2× more than beta-carotene).
Commercially produced by extraction from tomatoes or synthesis/fermentation. Unlike other carotenoids, lycopene has no pro-vitamin A activity but is extensively researched for prostate health, cardiovascular and skin protection benefits.
