Purple Carrot Extract is obtained from purple-fleshed carrots (Daucus carota) rich in acylated anthocyanins, particularly cyanidin-3-(sinapoyl)(feruloyl)sophoroside-5-glucoside.
These acylated anthocyanins offer superior stability to heat, light and pH compared to non-acylated anthocyanins from berries, making purple carrot one of the most commercially successful natural red-purple colourants.
