Red Fermented Rice Powder is produced by fermenting cooked rice with the mould Monascus purpureus, which produces a complex of red, orange and yellow pigments (monascorubrin, rubropunctatin, monascin etc.).
Widely used in East Asian cuisine and food manufacturing as a natural red colourant for meats, tofu, sauces and confectionery. Some strains also produce monacolin K (identical to lovastatin) for cholesterol management supplements.
