Sodium Copper Chlorophyllin (SCC) is produced by saponifying natural chlorophyll to remove the phytol tail (making it water-soluble), then replacing the central magnesium ion with copper for stability. The resulting dark green, water-soluble pigment is one of the most commercially important green food colourants.
It offers excellent stability to heat, light and pH. Used in beverages, confectionery, dairy, pasta and supplements.
