Spirulina Blue, also known as phycocyanin, is a blue protein-pigment complex extracted from spirulina (Arthrospira platensis) microalgae.
It is one of the very few natural sources of true blue colour approved for food use, and has become essential for the clean-label movement as a replacement for synthetic Brilliant Blue (E133). Provides vivid blue colour but is sensitive to heat (>60°C) and extreme pH.
