Turmeric powder is produced by drying and grinding the rhizomes of Curcuma longa. It contains 2-5% curcuminoids (primarily curcumin) that provide the characteristic yellow-orange colour, along with volatile oils (turmerone, ar-turmerone) that contribute the distinctive earthy, slightly bitter flavour.
Used both as a spice and a natural colourant in mustard, curry, rice, dairy, bakery and beverages. Also widely consumed as a health supplement.
