For traditional yeast leavened bread, calcium propionate is often preferred because it also enriches the bread with calcium. That said, sodium propionate is used where a sodium carrier is acceptable and calcium interference is a concern.
Chemically Leavened Cakes and Tortillas
In chemically leavened products like cakes and tortillas, sodium propionate is actually the preferred propionate. Calcium ions from calcium propionate can interfere with the bicarbonate based leavening reaction, while sodium propionate stays out of the way and lets the chemical leaveners work normally.
Cheese and Dairy Applications
Sodium propionate serves as a mold inhibitor in processed cheese foods, cheese spreads, and cold pack cheese formulations. It can be added with emulsifying salts in the cooker or sprinkled onto ground cheese base during working and agitation. Propionate treated parchment wrappers also provide surface protection for butter, even though propionates are not added directly to the butter itself.
Animal Feed and Other Uses
In animal feed and grain storage, sodium propionate prevents mold contamination that could spoil feed or produce mycotoxins, protecting livestock health and feed value. The pharmaceutical industry uses it as an excipient in certain tablet and capsule formulations, and it is occasionally used as a topical antifungal in medicated products.
Safety and Regulatory Status
Sodium propionate is generally recognized as safe, and regulatory authorities have not set a numerical acceptable daily intake because propionic acid is a normal metabolic intermediate in humans. Maximum permitted levels vary by country and by product category, so manufacturers should check the applicable regulations for their target markets before finalizing formulations.
