Acid Calcium Pyrophosphate (Ca₂P₂O₇·2H₂O) is an acidic calcium phosphate that reacts with sodium bicarbonate to produce CO₂ gas for leavening. It provides a slow, controlled gas release during baking.
This makes it ideal for refrigerated doughs, biscuits and self-rising flour. ACPP also serves as a calcium fortification agent and moisture-retention aid in processed foods.
