Aroma Ginger Oil is produced by steam distillation of cleaned, sliced, and dried ginger rhizomes, typically yielding 1.5–3.0% essential oil. The oil captures the volatile aroma profile of ginger but does not contain the pungent non-volatile gingerols and shogaols responsible for ginger's heat — those remain in the oleoresin. Primary constituents include zingiberene (20–30%), β-sesquiphellandrene, ar-curcumene, α-farnesene, and camphene.
Aroma Ginger Oil is used at typical flavor-use levels of 10–200 ppm in soft drinks, ginger ale, candies, baked goods, ice cream, and Asian sauces. It is FEMA GRAS (FEMA 2521) and recognized under FDA 21 CFR 182.20 as a natural flavoring substance. Stable when properly stored in sealed containers at cool temperatures away from light; typical shelf life 24 months.
