Calcium Hydroxide (Ca(OH)₂), also known as slaked lime or hydrated lime, is produced by hydrating food-grade calcium oxide.
It is a strong base (pH ~12.4) used in food processing as an acidity regulator, firming agent (for pickles, fruits), nixtamalization agent (tortilla/masa production), water treatment aid and sugar refining clarifier. E526 approved for food use in the EU.
