Chitosan Oligosaccharide (COS) is manufactured by enzymatic or acidic hydrolysis of chitosan derived from deacetylated crustacean chitin.
Unlike high-molecular-weight chitosan, COS is fully water-soluble, heat-stable and highly bioavailable. It has prebiotic, immune-modulating, antimicrobial, antioxidant and cholesterol-lowering activity, and is used in functional foods, supplements and agricultural applications.
