Ferric Sodium EDTA (Sodium Iron Ethylenediaminetetraacetate) is a chelated iron form where Fe³⁺ is bound within an EDTA complex.
WHO and CODEX recommend it for iron fortification of cereal flours, soy sauce, fish sauce and other staple foods, as the chelate protects iron from dietary inhibitors (phytate, tannins, polyphenols) and delivers 2-3× higher bioavailability than ferrous sulfate in inhibitor-rich diets.
