Garlic Oil is obtained by steam distillation of crushed garlic cloves. This yields a concentrated essential oil rich in diallyl disulfide (DADS, 40-50%), diallyl trisulfide (DATS), allyl methyl trisulfide and other volatile organosulfur compounds.
It delivers intense, standardised garlic flavour for processed food manufacturing. Also used in health supplements for cardiovascular and immune benefits attributed to organosulfur compounds.
