Glucono-delta-lactone (GDL) is a cyclic ester of gluconic acid produced by the enzymatic oxidation of glucose using glucose oxidase or by fermentation with Aspergillus niger. When dissolved in water, GDL slowly hydrolyzes to gluconic acid. It provides a gradual and controlled decrease in pH.
This unique slow-acidification property makes GDL the preferred coagulant for silken tofu production and an ideal ingredient for meat curing without starter cultures. GDL also functions as a leavening acid in combination with baking soda. This produces carbon dioxide with a controlled reaction rate. Its mild, slightly sweet flavor and clean-label status make it a versatile acidulant for modern food processing.
