Glucosyl Glycoside is produced by attaching glucose units to the steviol glycoside backbone through enzymatic transglucosylation using cyclodextrin glucanotransferase (CGTase). This modification reduces the bitter and licorice-like aftertaste characteristic of conventional stevia extracts while maintaining high sweetness intensity. The glucosylation process primarily targets rebaudioside A and stevioside, creating derivatives with a cleaner, more sugar-like taste profile and improved water solubility. Glucosyl Glycoside has been approved for use as a sweetener in Japan since the 1980s and is gaining acceptance in other markets.
