Instant Xanthan Gum is produced by agglomerating standard xanthan gum (a high-molecular-weight polysaccharide from Xanthomonas campestris fermentation) into porous granules that disperse instantly in water without forming lumps.
It delivers the same high viscosity, pseudoplastic flow, acid/salt stability and gluten-free thickening power as conventional xanthan, with dramatically improved ease-of-use in dry-blend, cold-process and instant-mix formulations.
