Licorice Extract is obtained by water or ethanol extraction of dried licorice root. It is available in Block, Granule and Powder forms depending on the degree of processing.
The primary active is glycyrrhizin (glycyrrhizic acid), which is 30-50× sweeter than sucrose. The extract provides a distinctive sweet, warm, anise-like flavour used in confectionery, tobacco, beverages, traditional medicine and as a pharmaceutical excipient. Also contains flavonoids (glabridin, liquiritigenin) with anti-inflammatory and antioxidant activities.
