Magnesium Stearate (E470b) is produced by reaction of stearic acid with magnesium hydroxide or magnesium chloride with sodium stearate.
It is insoluble in water and most solvents, melts at 117–150 °C, and has hydrophobic character that prevents ingredient adhesion to machinery. Food-grade Magnesium Stearate meets USP, FCC and EP specifications and is GRAS under FDA 21 CFR.
