Menthone (p-menthan-3-one) is the second most abundant compound in peppermint oil (14-32%). It contributes a fresh, slightly herbaceous, sweet mint character that complements menthol's cooling.
It occurs as L-menthone (main isomer) and D-isomenthone. Used in food flavouring to round out mint profiles, in perfumery for green-minty notes, and as a penetration enhancer in transdermal pharmaceutical formulations.
