Monosodium Fumarate (NaHC₄H₂O₄) is produced by partial neutralisation of fumaric acid with sodium hydroxide. It combines the tartness of fumaric acid with improved solubility from the sodium salt form.
Used in beverages, confectionery and baked goods as an acidulant, and in animal feed as a gut acidifier and growth promoter. Its buffering capacity provides stable pH in food systems.
