OPO (Sn-2 Palmitate, β-palmitate) is a structured triglyceride produced by enzymatic interesterification. This positions palmitic acid primarily at the sn-2 position (≥ 40%) of the glycerol backbone, similar to human milk fat.
This structure prevents formation of calcium-palmitate soaps in the infant gut. This improves calcium absorption, fat absorption and reducing constipation and crying.
