Potassium Lactate (KC₃H₅O₃) is typically supplied as a 60% aqueous solution. It is one of the most effective clean-label antimicrobial agents for processed meats.
It provides shelf-life extension by inhibiting Listeria monocytogenes and other pathogens. Also functions as a humectant (moisture retention), flavour enhancer and acidity regulator. Preferred over sodium lactate in reduced-sodium formulations.
