Pullulan is a linear homopolysaccharide of maltotriose units (α-1,4 and α-1,6 linked glucose) produced by the fungus Aureobasidium pullulans through aerobic fermentation. It forms transparent, odourless, tasteless and oxygen-barrier films.
This makes it an ideal edible coating for fruits, confectionery, supplements and pharmaceutical capsules. Pullulan capsules (HPMC alternative) are plant-derived, non-GMO, and suitable for vegetarian/halal/kosher markets.
