Sodium Acetate Anhydrous (CH₃COONa) is a white, hygroscopic powder with a faint acetic odour. It functions as a preservative (inhibits bacteria and moulds), buffering agent, seasoning adjunct (vinegar-like flavour) and sequestrant.
Used in snack seasonings, ready meals, pickled foods and bread as a mould inhibitor. Also serves as a heat-storage medium in hand warmers and as a laboratory buffer.
