SAIB is an ester of sucrose with acetic and isobutyric acids. It functions as a density-adjusting (weighting) agent for flavour oils in beverages, keeping citrus and other flavour oil emulsions stable and preventing ringing or separation.
Approved as E444 in the EU and GRAS in the US. Used primarily in non-alcoholic citrus beverages where brominated vegetable oil (BVO) alternatives are needed.
