Trisodium Pyrophosphate Monohydrated (Na₃HP₂O₇·H₂O) is a moderately alkaline pyrophosphate that combines buffering, emulsifying and chelating functions.
In food processing it is used as a quality improver for processed meats, an emulsifying salt for cheese, a component of leavening systems, and a colour-preservation agent for potatoes and other vegetables. Its monohydrated form offers improved handling and dissolution characteristics.
