How Ester Gum Is Made
Glycerol ester of wood rosin is harvested from the stumps of longleaf pine (Pinus palustris) and slash pine (Pinus elliottii) trees. The raw wood rosin is refined to food-grade purity, then reacted with food-grade glycerin (non-animal origin) through an esterification process to produce the final ingredient.
The resulting product is a clear, pale yellow, thermoplastic resin. Kosher Classification of Ester Gum

The primary function of ester gum in beverages is density adjustment. Regulatory Status and Storage
Ester gum is the only rosin ester approved by the European Union for use in adjusting the density of citrus oil in beverages. The FDA also permits its use in food products. It is important to note that glycerol ester of gum rosin is a different product from glycerol ester of wood rosin and does not carry the same regulatory approvals.
