Methyl Cyclopentenolone (2-Hydroxy-3-methyl-2-cyclopenten-1-one, MCP or Cyclotene) is a cyclic enol-ketone naturally found in coffee, maple syrup, roasted foods and tobacco smoke.
At trace levels it provides intense maple-syrup, caramel, burnt-sugar and fenugreek-like aroma. One of the most widely used flavouring compounds in maple, caramel, coffee and tobacco flavour formulations.
