This blend combines the water-activity-lowering and bacteriostatic properties of sodium lactate with the aggressive undissociated-acid-form antimicrobial activity of sodium diacetate (a molecular complex of acetic acid + sodium acetate). Sodium diacetate delivers approximately twice the acid activity per gram compared to sodium acetate alone, making this blend one of the most cost-effective solutions for Listeria control at lower total use levels.
The USDA FSIS has specifically validated this blend for use in ready-to-eat meats at 2.0–4.8% of finished product weight. Both ingredients are GRAS (FDA 21 CFR 184.1754 sodium diacetate; 184.1768 sodium lactate) and approved as E262(ii) and E325 respectively in the EU. The liquid format allows easy incorporation via brine injection or direct addition during cooking.
