Potassium Lactate Solution is the reduced-sodium alternative to sodium lactate, increasingly important as food manufacturers pursue sodium reduction targets. Functionally it performs similarly to sodium lactate — inhibiting Listeria monocytogenes, Clostridium species, and spoilage bacteria via water activity reduction and metabolic interference — but delivers potassium instead of sodium. It supports better dietary mineral balance.
Commercial grade is typically a 60% solution (by weight) with pH 6.5–8.5. It is GRAS under FDA 21 CFR 184.1639 and approved as E326 in the EU. Typical use levels in ready-to-eat meat products range from 1.0% to 4.5% of finished product weight, comparable to sodium lactate dosing. The solution is miscible with water and compatible with brines, marinades, and direct-add systems.
