Tripotassium Phosphate (K₃PO₄) is a white, highly water-soluble salt with strong alkalinity (pH ~11.5-12.5). In food it serves as an emulsifying salt for processed cheese, a buffering agent, a quality improver for processed meats and a potassium fortification source.
Preferred over trisodium phosphate in reduced-sodium formulations. Also used in liquid detergents and water treatment.
