Trisodium Citrate Dihydrate (Na₃C₆H₅O₇·2H₂O) is the standard commercial form of trisodium citrate. It is one of the most widely used food additives.
It serves as a buffering agent, emulsifying salt, sequestrant, flavour modifier and preservative synergist. Essential in processed cheese manufacture, beverage pH control, meat processing and blood banking (anticoagulant). Easily dissolved in water with a mild saline taste.
