Natamycin 95% is the high-purity form of natamycin (pimaricin), a polyene macrolide antifungal antibiotic produced by fermentation of Streptomyces natalensis. At 95% purity, this grade allows for precise dosing calculations in food formulations and custom blending operations. Natamycin is unique among food preservatives in that it targets only fungi (molds and yeasts) without affecting bacteria.
This makes it ideal for fermented foods that rely on bacterial cultures. It is effective at very low concentrations, typically 1-20 ppm on the food surface, and does not penetrate significantly into the food matrix.
