Tripotassium Glycyrrhizinate is produced by neutralizing glycyrrhizic acid with potassium hydroxide to form the fully neutralized tripotassium salt. This complete salt formation provides superior water solubility compared to both the free acid and monopotassium forms, making it the preferred grade for aqueous applications. The compound retains all functional properties of glycyrrhizic acid including its sweet-bitter licorice taste, flavor-enhancing capability, and biological activities such as anti-inflammatory and hepatoprotective effects. It is approved as E958 in the EU.
