Fructooligosaccharides are naturally occurring oligosaccharides found in many fruits and vegetables, produced commercially by enzymatic transfructosylation of sucrose or extraction from chicory root inulin. FOS consists primarily of kestose, nystose, and fructofuranosyl nystose.
