Tertiary butylhydroquinone (TBHQ) is one of the most effective synthetic antioxidants for stabilizing unsaturated vegetable oils and animal fats against oxidative deterioration. It provides superior carry-through protection during high-temperature processing such as frying, baking, and extrusion.
TBHQ is particularly effective in polyunsaturated oils where other antioxidants may be less stable. It works by interrupting the free radical chain reaction of lipid oxidation, preventing the formation of off-flavors and odors. TBHQ can be used alone or in combination with other antioxidants such as BHA, BHT, and citric acid for enhanced synergistic protection.
