Sorbitan Monolaurate (Span 20) is manufactured by direct esterification of sorbitan with food-grade lauric acid from coconut or palm kernel oil.
With HLB ~8.6, it is the most hydrophilic of the Span series. This makes it useful in O/W-leaning emulsions, flavour solubilisation, and co-emulsification with Polysorbate 20 in cosmetics, personal care and food.
