Dehydrated Ginger Flakes are produced by cleaning, peeling, slicing fresh ginger rhizomes to 2–4 mm thickness, and hot-air drying at 55–65 °C to moisture ≤10%.
The product retains the characteristic pungent flavour of fresh ginger (gingerol and shogaol) and is sieved to flake sizes of 5–15 mm for visual appeal and uniform distribution.
