This yields a phospholipid-rich lecithin with superior functional purity compared to soybean lecithin. Particularly rich in phosphatidylcholine (PC) and phosphatidylethanolamine (PE), it is a preferred lecithin source for injectable pharmaceuticals, liposomal formulations, parenteral nutrition and premium infant formulas.
