Methyl Acetoacetate is produced commercially by the reaction of diketene with methanol or by the Claisen condensation of methyl acetate. The methyl ester analog of ethyl acetoacetate, it offers similar fruity flavor contributions but with slightly different volatility and solubility profiles. Used in flavor compositions at low levels (1–30 ppm) for apple, peach, berry, grape, and tropical notes.
Industrial applications include synthesis of pharmaceutical active ingredients (particularly β-blockers, calcium channel blockers), azo and diketopyrrolopyrrole pigments, and agricultural chemicals. FEMA GRAS 2412, listed under FDA 21 CFR 172.515, and approved in the EU Flavoring Regulation. Typical purity ≥ 99%. Slightly hygroscopic; store in sealed containers at ambient temperature.
