Capsanthin is the dominant carotenoid in ripe red capsicum peppers, responsible for their characteristic red colour. Natural capsanthin extract (paprika extract) is processed to maximise colour while minimising or eliminating capsaicin (heat).
This results in a non-pungent red colourant. Available in various colour strengths (measured in ASTA or Colour Units), it is one of the most widely used natural red colourants globally.
