Polysorbate 80 is produced by ethoxylation of sorbitan monooleate with approximately 20 moles of ethylene oxide.
With an HLB of ~15.0, it is a versatile hydrophilic emulsifier suitable for O/W emulsions, wetting and solubilising vegetable oils, flavour oils and fat-soluble vitamins. Widely used in ice cream, dairy, bakery, beverages and pharmaceuticals.
