Enzyme Lecithin is manufactured by treating crude or refined lecithin with phospholipase A (PLA1 or PLA2) enzymes, which selectively hydrolyse one fatty-acid chain from phospholipids to produce lysophospholipids (lysolecithin).
The modification greatly improves aqueous dispersibility, O/W emulsification, and heat/acid stability. This makes it ideal for dairy, beverage and bakery applications.
