Sodium Polyphosphate ((NaPO₃)ₙ, commonly known as Sodium Hexametaphosphate or SHMP) is a glassy, water-soluble polyphosphate with exceptional metal-ion sequestering, dispersing and water-binding capabilities.
It is one of the most widely used food phosphates, applied in processed meats, seafood, dairy, beverages and canned foods for moisture retention, protein stabilisation, emulsification and prevention of struvite crystal formation.
