Trisodium phosphate (TSP) is produced by the complete neutralization of phosphoric acid with sodium hydroxide. This yields a highly alkaline salt. It is available in both anhydrous and dodecahydrate crystalline forms.
TSP is widely used in the food industry as an antimicrobial wash for poultry carcasses, effectively reducing Salmonella and other pathogenic bacteria. It also functions as an emulsifying salt in processed cheese, a pH adjuster in cereals and oatmeal, and a starch modifier in food processing. TSP's strong alkalinity and excellent cleaning properties make it a preferred agent for CIP (clean-in-place) and equipment sanitation in food manufacturing facilities.
