Dehydrated Garlic Flakes are produced from fresh garlic cloves that are peeled, sliced to 1–3 mm thickness, and hot-air dried at 55–65 °C to moisture ≤6.5%.
They are graded to flake sizes of 5–15 mm and sieved to remove fines. The flakes offer visible garlic particles in finished products, ideal for Italian, Mediterranean and Asian cuisine blends.
